Ingredients: 2 cups cooked chicken breast, diced. 1/2 cup mayonnaise. 1/4 cup plain yogurt. 1 tablespoon curry powder. 1/4 cup raisins. 1/4 cup chopped celery. 1/4 cup chopped green onions. Salt and pepper to taste.
Instructions: Put chicken dices, mayonnaise, yogurt, and curry powder in a large bowl. Combine well. Put green onions, raisins, and celery in the bowl. Combine everything well by stirring. Add salt and pepper to taste and make changes as needed. Put it in the fridge with the lid on for at least an hour before serving so the flavors can mix. Enjoy! Serve cold.

This tofu bowl with homemade Thai green curry will transport you to Thailand and its vibrant flavors. A filling and healthy dinner is created with creamy coconut milk, flavorful mushrooms, and tofu infused with fragrant Thai green curry paste.
Ingredients: 200g firm tofu, cubed. 1 cup sliced mushrooms. 1 can 400ml coconut milk. 2 tbsp Thai green curry paste. 1 cup cooked brown rice. 1 tbsp coconut oil. 1 red bell pepper, sliced. 1 small onion, sliced. 2 cloves garlic, minced. 1 tbsp soy sauce. 1 tsp brown sugar. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Coconut oil should be heated on medium heat in a pan. Add the chopped garlic and onion slices, and saut until they become tender. Add the bell pepper and mushrooms, and cook until soft. Place the vegetables aside, then add the cubed tofu to the pan and cook it until it turns golden brown. Add Thai green curry paste and stir until the tofu and vegetables are evenly coated. Add the brown sugar, soy sauce, and coconut milk. Heat through to a simmer. To taste, add salt and pepper for seasoning. Top with cooked brown rice and fresh cilantro and serve hot.
