These vegan cranberry scones are flaky, soft, and taste great with tart cranberries. Great for breakfast or a cozy snack in the afternoon!
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 cup vegan butter, chilled and cubed. 1/2 cup dried cranberries. 3/4 cup almond milk. 1 teaspoon vanilla extract. 1 tablespoon lemon juice. 1 tablespoon maple syrup optional, for brushing.
Instructions: Preheat the oven to 400F 200C. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Add chilled vegan butter cubes to the dry ingredients and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs. Stir in dried cranberries. In a separate small bowl, mix almond milk, vanilla extract, and lemon juice. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix. Transfer the dough onto a floured surface and pat it into a circle about 1 inch thick. Use a knife to cut the dough into 8 wedges. Place the scones on a baking sheet lined with parchment paper. Optional: Brush the tops of the scones with maple syrup for a shiny finish. Bake for 15-18 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
