Fig Follow Up: Fresh Fig & Orange Jam Ingredients • 3 lbs ripe, fresh figs stems removed and quartered • zest from 1 orange • 2 tablespoons lemon juice • 1 cup granulated white sugar • 1 cup packed light brown sugar • 4 oz. Triple Sec or Grand Marnier orange liqueur • 1/4 teaspoon salt Instructions • Place figs in a large pot along with orange zest, lemon juice, sugars, orange liqueur and salt. Stir and let stand at room temperature for one hour, stirring occasionally to genlty macerate. • Place pot on medium heat and bring to a slow boil for half an hour to 45 mins. Stir and mash the figs with a potato masher, to crush larger pieces. An immersion blender can be used to blend any reamaining lumps. Remove from heat and can in clean glass jars.
