This smooth tomato soup is the best way to feel better. With its rich and sour taste, it's like getting a warm hug from the inside out. It's simple to make and will definitely please.
Ingredients: 2 tbsp olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 can 28 oz whole tomatoes. 2 cups vegetable broth. 1/2 cup heavy cream. 1 tsp dried basil. 1/2 tsp dried oregano. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, saut until translucent. Add whole tomatoes with their juices, breaking them up with a spoon. Stir in vegetable broth, dried basil, and dried oregano. Bring the mixture to a simmer and let it cook for 15 minutes. Using an immersion blender, blend the soup until smooth. Stir in heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes. Serve hot and enjoy!

Through my life I have struggled with depression and anxiety. One thing that has helped me process through some these difficult times has been to just write shit down in journals. I would write whatever was on my mind at the time. Most of it was struggle. Me trying to process confusion. If I was writing, I was usually doing so because I needed to get some shit sorted out.
Even if my writing was simply to brain dump everything that was bothering me on to paper, it would still help me to just get these things out of my head and into a format that I can then read, almost as if from the perspective of an outsider. I would look through my writings and inevitably be able to pick out a couple of themes. Once you see the bigger issues it usually boiled down to two or three main issues, which felt like 100 before writing it out. This process has been really useful in figuring out which steps to take next.
