This elegant pasta dish combines tender scallops with the freshness of courgettes, tomatoes, and the brininess of capers. It's a delightful blend of flavors and textures that's perfect for a special occasion or a gourmet weeknight dinner.
Ingredients: 200g taglierini pasta. 200g scallops. 2 courgettes, thinly sliced. 200g cherry tomatoes, halved. 2 tablespoons capers. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook taglierini pasta until it is al dente. Remove the water and set it aside. Set a pan on medium heat and add the olive oil. Add the minced garlic and cook until it smells good. Add the sliced courgettes to the pan and cook for three to four minutes, until they start to get a little soft. You can move the zucchini to the side of the pan and add the scallops. It should take about two to three minutes per side to cook until both sides are golden brown. Add the capers and cherry tomatoes and stir them in. Cook for two more minutes, until the tomatoes start to get a little soft. Toss the cooked taglierini with the scallop and vegetable mixture in the pan after adding it. Add pepper and salt to taste. Before serving, sprinkle with fresh basil leaves.
