Chipa - Paraguayan cheese bread rolls
Chipa is a small cheese bread roll which is quite popular for breakfast in Paraguay. Years ago I spent few weeks in this beautiful country and I remember vendors entering busses and screaming “chipa, chipa, chipa”. There’s another reason for me to remember this name so well - in Polish it means something very specific and not really food related, so it was a big surprise to hear it, oops.
It is a delicious little bite, especially when still warm and cheese is all chewy and looooong. You can have it just like it or you can make it a bit more fancy and add guacamole. I chose the fancy option as I like guacamole and it made a perfect breakfast.

Apple Crisp French Toast
Egg mixture:
1tsp all spice
1tsp nutmeg
1tbsp cinnamon
1tbsp sugar
1/4 cup heavy cream
3 eggs
•whisk together then make French toast how you normally would
Apple pie syrup
1 large apple
1tsp sugar
1tsp cinnamon
1tsp olive oil
1tbsp bourbon maple syrup
•cook stirring occasionally until apples are soft and syrup has thickened a bit
•drizzle over your French toast and garnish with ice cream of your choice (maple sausage makes a wonderful add on as well)
I haven’t posted any fancy toast in a while!!!
Anyway - I’ve got some fresh Creme Fraiche, Cranberries (fresh and dried) cooked and soaked for a week in Hibiscus Syrup, a little Avocado (what toast is fancy without avocado), Sea Salt and Toasted Almonds. ❤️
