Got a mixed breakfast plate going this morning with all the right stuff: halloumi, bacon, jammy eggs, avocado, and strawberries. . Weekend breakfasts are the best breakfasts, don’t you agree? After a quick 1.5 day trip, I’m back in action and ready for a long day. So much to do, so little time… . On the menu clockwise starting from the bacon: . 1.Pan fried some @porterroad bacon (I did more, but saved the rest for meals throughout the week). . 2. I sliced up some halloumi and pan fried for about a minute on each side in some of the bacon grease. . 3.Sliced up half an avocado and topped with everything but the bagel seasoning. . 4.Sliced up a couple of organic strawberries. . 5.Served with 1 @peteandgerrys egg. For this yolk, I boiled the egg for 6.5 mins and put it immediately in an ice bath. 6.5 mins gets a jammier egg and 8-9 mins get a firmer yolk. I just sliced the egg and probably dip some of that halloumi or bacon in it. .
