People all over Italy love Spaghetti Alla Carbonara, which is famous for its thick, creamy sauce made from eggs, Parmesan cheese, and pancetta or guanciale. With its simple but rich flavors, this recipe captures the essence of traditional Carbonara.

Ingredients: 300g spaghetti. 150g pancetta or guanciale, diced. 3 large eggs. 100g grated Parmesan cheese. Salt, to taste. Black pepper, freshly ground, to taste.

Instructions: Follow the directions on the package and cook the spaghetti in a large pot of salted boiling water until it is al dente. For a different recipe, cook diced pancetta or guanciale over medium heat in a different pan while the spaghetti is cooking. Take it off the heat and set it aside. Whisk the eggs and grated Parmesan cheese together in a bowl until they are well mixed. When the spaghetti is done, drain it and set aside about 1/4 cup of the pasta water. Toss the cooked pancetta or guanciale and hot spaghetti together as soon as you add them to the pan. Add the egg and cheese mix to the hot spaghetti and quickly stir to cover the noodles. The pasta's heat will cook the eggs and make the sauce smooth. If the sauce is too thick, add some of the pasta water that you saved to thin it out. Season with black pepper and salt that you just ground yourself. If you want, you can serve it right away with extra grated Parmesan cheese and a sprinkle of black pepper on top.

Ingredients: 8 oz spaghetti. 4 slices of bacon, chopped. 2 cloves garlic, minced. 2 large eggs. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Chopped parsley for garnish.

Put chopped bacon in a pan and cook it over medium heat until it gets crispy. Take the bacon out of the pan and set it aside. Leave the bacon fat in the pan. Put minced garlic in the pan and cook for one minute, until the garlic smells good. Add eggs, grated Parmesan cheese, salt, and pepper to a bowl and mix them together and whisk them. Put the cooked spaghetti and garlic in the pan, and then pour the egg mix over it. Throw it all together quickly until the spaghetti is evenly covered and the eggs are cooked through but still creamy. Toss the cooked bacon back into the pan after you add it back in. Add chopped parsley as a garnish before serving. Enjoy while hot!
