Lots of happy cooking happening during this quarantine! My daughter shared her favorite #vegetarian #burger #recipe with me. I turned it into a whole food plant-based oil-free recipe, and it is truly outstanding IMHO. They hold together very well, and they are delicious... and so #healthy of course! I’ll definitely be making these on a regular basis. It would be sad to keep this recipe all to myself. Ingredients • 1 (15 ounce) can black beans, rinsed and drained • 1/4 cup quinoa • 1/4 cup veggie broth • bread crumbs from 1 slice @foodforlifebaking Ezekiel bread • 1/4 cup diced yellow bell pepper • 2 tbsp onion powder • 1 tbsp garlic powder • 2 tsp cumin • 1 tbsp hot pepper sauce, such as @franksredhot (my daughter prefers this recipe without hot sauce because she doesn’t like spicy food) • 1 tbsp flaxseed mixed with 3 tbsp water (standard healthy #eggalternative) • Dash of salt & pepper, to taste Directions 1. Cook the quinoa. 2. Pre-heat the oven to 350. Line a cookie sheet with parchment paper. 3. Mash the black beans with a fork. 4. Add all ingredients together, and form the black bean mixture into 5 patties. 5. Place the patties on the parchment paper and bake for 7 minutes. Flip them over and bake for 7 more minutes.
