A quick and easy stir-fry recipe that combines succulent shrimp and fresh asparagus with a zesty lemon sauce. Perfect for a weeknight dinner!
Ingredients: 1 lb shrimp, peeled and deveined. 1 bunch asparagus, trimmed and cut into 2-inch pieces. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 teaspoon ginger, minced. 1/4 cup soy sauce. 2 tablespoons lemon juice. 2 tablespoons honey. 1 teaspoon cornstarch. Salt and pepper to taste. Cooked rice, for serving. Sesame seeds and green onions for garnish.
Instructions: In a small bowl, whisk together soy sauce, lemon juice, honey, and cornstarch. Set aside. Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the shrimp and stir-fry for 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside. In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ginger, stir-fry for 30 seconds until fragrant. Add the asparagus and stir-fry for 3-4 minutes until they become tender-crisp. Return the cooked shrimp to the pan and pour the sauce over the ingredients. Stir-fry for an additional 1-2 minutes until the sauce thickens and coats the shrimp and asparagus evenly. Season with salt and pepper to taste. Serve the shrimp and asparagus stir-fry over cooked rice. Garnish with sesame seeds and chopped green onions.
