Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Fondant or gumpaste in various colors. Royal icing store-bought or homemade.
Instructions: In a bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough into two portions, flatten each into a disc, and wrap in plastic wrap. Refrigerate the dough discs for at least 1 hour. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. On a floured surface, roll out one portion of the dough to about 1/4-inch thickness. Using cookie cutters, cut out desired shapes and place them on the prepared baking sheet. Bake the cookies for 8-10 minutes or until the edges are lightly golden. Remove the cookies from the oven and let them cool completely on a wire rack. Once the cookies are cooled, roll out the fondant or gumpaste to about 1/8-inch thickness. Use the same cookie cutters to cut out fondant/gumpaste shapes for each cookie. Brush a thin layer of water or edible glue on top of a cookie and gently press the matching fondant/gumpaste shape on it. Repeat the process for all cookies, allowing the fondant/gumpaste to adhere. To prepare the royal icing, if using a store-bought mix, follow the package instructions. If making royal icing from scratch, whisk together 2 cups of powdered sugar, 1-2 egg whites, and 1 teaspoon of lemon juice until stiff peaks form. Transfer the royal icing to a piping bag fitted with a small round tip. Decorate the cookies with the royal icing as desired, adding details and designs. Let the royal icing set and dry completely before serving or packaging the cookies. Your fondant and royal icing cookies are now ready to be enjoyed or gifted!
