A fragrant and flavorful Moroccan chicken dish cooked in a tagine or skillet, featuring a blend of spices, preserved lemon, and green olives.
Ingredients: 4 chicken thighs. 2 tablespoons olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1 teaspoon paprika. 1/2 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground turmeric. 1/4 teaspoon cayenne pepper. 1 cup chicken broth. 1 preserved lemon, thinly sliced. 1/4 cup green olives. 2 tablespoons chopped fresh cilantro. Salt and pepper to taste.
Instructions: Heat olive oil in a tagine or large skillet over medium heat. Season chicken thighs with salt and pepper, then add them to the skillet. Brown chicken on both sides, about 5 minutes per side. Remove chicken and set aside. In the same skillet, add chopped onion and garlic. Cook until softened, about 3 minutes. Stir in ground cumin, coriander, paprika, cinnamon, ginger, turmeric, and cayenne pepper. Cook for 1 minute until fragrant. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Return chicken to the skillet. Add preserved lemon slices and green olives. Cover and simmer for 25-30 minutes, until chicken is cooked through and tender. Garnish with chopped cilantro before serving.
