ingredienti e dosi _4 nodini di vitello - 300 gr di funghi galletti - 100 gr di lardo affumicato - cipolla - prezzemolo - burro - sale e pepe - vino bianco secco-method -Una preparazione piuttosto insolita, quella al cartoccio, che esalterà i teneri nodini di un'aroma che in padella difficilmente si riesce ad evocare. Sbucciate e tagliate la cipolla. Togliere la cotenna al lardo e tagliatelo a dadini. Pulite delicatamente i galletti. tritate il prezzemolo. Fate riscaldare il burro in una padella. Mettervi la cipolla tritata e lasciatela ammorbire. Attendete che diventi quasi trasparente e aggiungetevi il lardo e subito dopo aver mescolato l'intingolo 2 o 3 volte unirvi i funghi. Prolungate la cottura sino a che il tutto cominci a soffriggere. Lasciate cuocere lentamente sino a che l'acqua che hanno prodotto sia completamente evaporata. Salate, pepate, aggiungete il prezzemolo tritato, bagnate con mezzo bicchiere di vino bianco. Coprite e completate la cottura a fuoco lento sino a che i galletti non risultino teneri, il che richiederà circa quindici minuti, secondo la grandezza dei funghi. Preparate i cartocci di carta pergamena da forno o di alluminio e stendete ogni nodino su un letto di funghi. Coprite la carne con altra salsa di funghi e chiudete l'involucro. Mix all liquid ingredients together in a sauce pan over med-heat. Add dry ingredients and continue to stir for 1-min. Reduce heat to Simmer for 5-mins., then remove from heat. Pour over meats, poultry, or mushrooms, cover, and then refrigerate for 4-24 hours. Use as a basting sauce or as a dipping sauce.
