A tasty and flavorful chicken curry that is Paleo-friendly and is cooked slowly in coconut milk with fragrant spices.
Ingredients: 1.5 lbs chicken thighs, boneless and skinless. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 bell pepper, sliced. 1 can 14 oz coconut milk. 2 tablespoons curry powder. 1 tablespoon ginger, grated. 1 tablespoon coconut aminos. 1 tablespoon coconut oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: In a slow cooker, add chicken thighs, onion, garlic, bell pepper, coconut milk, curry powder, ginger, coconut aminos, coconut oil, salt, and pepper. Mix everything well to ensure chicken is coated with the curry mixture. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and cooked through.
