In one popsicle, the creamy figs and ricotta go well together, and in another, the sweet and sour blackberries are a nice contrast. It's nice to have these treats on a hot day or as a sweet ending to any meal.
Ingredients: 1 cup fresh figs, diced. 1 cup ricotta cheese. 1/2 cup heavy cream. 1/2 cup sugar. 1 tsp vanilla extract. 1 cup blackberries. 1/2 cup condensed milk. 1/4 cup milk. Popsicle molds.
Instructions: In a blender, combine diced figs, ricotta cheese, heavy cream, sugar, and vanilla extract. Blend until smooth and creamy. Pour the fig mixture into popsicle molds, filling each mold halfway. Freeze for about 2 hours or until semi-frozen. Meanwhile, blend blackberries, condensed milk, and milk until smooth. Pour the blackberry mixture on top of the semi-frozen fig mixture in the popsicle molds. Insert popsicle sticks into each mold and freeze for another 4-6 hours, or until fully set. To serve, run the molds under warm water for a few seconds to loosen the popsicles. Enjoy!
