These roasted potatoes with rosemary are a simple and tasty side dish that goes well with any meal. Adding fresh rosemary, garlic, and olive oil to the potatoes brings out their natural sweetness. Roasting them in the oven makes the outside crispy and the inside soft.
Ingredients: 2 pounds small red potatoes, quartered. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon fresh rosemary leaves, chopped. Salt and pepper to taste.
Instructions: Warm the oven up to 425F 220C. Add the potatoes to a large bowl and mix in the olive oil, minced garlic, chopped rosemary, salt, and pepper. Make sure the potatoes are well covered. Put the potatoes on a baking sheet that has been lined with aluminum foil or parchment paper. Spread them out in a single layer. Toss the potatoes once or twice during the cooking time and roast them in a hot oven for 25 to 30 minutes, or until they are golden brown and soft. Take it out of the oven and serve it hot. If you want, you can add more chopped rosemary on top.
