Chinese Scallion Pancakes, also known as Cong You Bing, are a popular street food in China. They are crispy on the outside with layers of savory scallions on the inside. This recipe is a simple way to recreate these delicious pancakes at home.
Ingredients: 2 cups all-purpose flour. 1 cup hot water. 1/2 cup finely chopped scallions green onions. 2 tablespoons vegetable oil. 1 teaspoon salt. Soy sauce for dipping optional.
Instructions: In a large bowl, combine the all-purpose flour and salt. Gradually add the hot water while stirring with a fork until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes. Divide the dough into 4 equal portions and roll each portion into a ball. On a floured surface, roll out one of the dough balls into a thin circle, about 8 inches in diameter. Brush the surface of the circle with a thin layer of vegetable oil, then sprinkle with a handful of chopped scallions. Starting from one edge, roll up the dough like a jelly roll to create a long cylinder. Take the cylinder and coil it into a flat, round pancake. Press it down gently to flatten. Repeat the process with the remaining dough balls. Heat a non-stick skillet over medium heat and add a bit of vegetable oil. Cook each pancake for about 2-3 minutes on each side, or until they are golden brown and crispy. Serve the Chinese Scallion Pancakes hot, cut into wedges, and optionally with soy sauce for dipping.
