Ingredients: 1 cup rolled oats. 1/2 cup shredded coconut. 1/2 cup chocolate chips. 1/2 cup butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, mix together the butter, brown sugar, and granulated sugar until creamy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the rolled oats, shredded coconut, and chocolate chips. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them apart. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Ingredients: 1 cup rolled oats. 1 cup coconut milk. 2 tbsp maple syrup. 1/2 tsp vanilla extract. 1/4 cup shredded coconut. 1/2 cup pomegranate seeds. 1/4 cup chopped nuts optional.
Instructions: In a bowl, combine rolled oats, coconut milk, maple syrup, and vanilla extract. Stir well to ensure oats are fully coated. Cover and refrigerate overnight or for at least 4 hours. In the morning, layer the overnight oats with shredded coconut, pomegranate seeds, and chopped nuts in a glass or jar. Repeat layers until ingredients are used up, ending with a sprinkle of pomegranate seeds and shredded coconut on top. Serve chilled and enjoy!
