uhm, well. So I didnāt actually measure any of the ingredients, I just eyeballed it and then went with my gut, but I guess Iāll walk through the steps a bit?
I found a recipe online for choco chip cookies with no butter (since i didnāt have any of that) I also didnāt have the oil it required, so I melted coconut oil instead.
I put in roughly the same amount of sugar as I had coconut oil, added roughly (your gonna see me using that word a lot) a teaspoon of vanilla extract and 2 eggs (i should have only put one, but the mixture wasnāt liquid enough⦠oops?)
I mixed that for a bit with a fork, though I really wished I had a mixer cause it would probably have made the dough lighter in the end.
I added roughly a cup of flour, roughly a teaspoon of baking powder (I just looked at the container and apparently the baking powder is double acting⦠interesting) , and then I added a bit of coco. I was thinking āhmm, I wonder how much coco I actually should useā so I read what the back of the baking coco container said, to get an idea of ratios, and only then realized there should be more baking coco than flour.
So I scooped out the flour i was able to get uncontaminated, and put it back in the bag. I then added more coco (how much did I add? Well i honestly couldnāt tell ya) . I mixed it by hand (for some probably stupid reason) and got half of it stuck on my fingers, decided it was too sticky, and slowly added more flour until it was less so.
(Until writing this, I completely forgot I missed the fact the recipe calls for a pinch of salt. So⦠no salt in it, but that might have made it better)
At this point I had to scrape the dough off my fingers and wash my hands cause they were a mess. After that I poured in how ever many choco-chips felt right (they were milk chocolate chip) and mixed those in. I admit a few times throughout this process I tasted the dough to make sure it wasnāt a train wreck (it wasnāt taste wise, but I think i wouldāve given a baker an aneurism if they watched me during this process).
But I forgot to coat my hands with flour when doing that so they were again a mess. I didnāt have any oil or more coconut oil so I had to use ghee instead to grease the parchment paper.
I formed the shapes by hand completely (and got both hands messy again, after I washed them a second time cause I had to do that to grease the paper) and put the cookies on the tray.
the recipe asks to chill them for 30 minutes but I already preheated the oven (air fryer on bake mode) (to 375f ) at that time. So they got maybe 10 minutes in the fridge.
I put them in, cooked for around 13 minutes, thought they werenāt cooked enough and turned the temp to 360f and cooked for like, maybe 7 more minutes? Not sure.
When I was satisfied that the inside most likely wasnāt raw, I put mini marshmallows (those were the only ones I had) on top. After the first cookie I realized that they wouldnāt stay on well, so for the rest of them I flipped the cookies over and put the marshmallows on the flat side (so smart, I know)
I let those cook until golden brown (taking them out once to squish the mallows together a bit) and tada! Cookies :3
Ingredients list:
Flour - less than a cup
Sugar (white, but the recipe I glanced at wanted both white and brown, I didnāt have both though) - idk, a bit more that 1/2 cup probably
butter - didnāt have so oil - i have no freaking clue, around 1/2 cup i think?
Baking powder (double acting but only on accident- around a teaspoon
salt - none cause I completely forgot it
Baking coco - more than the flour
chocolate chips - What feels right (but not more than half the amount of dough)
Eggs - 2 (probably should have used 1 but oh well)
vanilla extract - close to a teaspoon
Marshmallows (mini but other is ok) - as many as you can fit on top
