Chocolate Choux Pastry

Crispy shells with a light, airy interior give way to thick chocolate cream that doesn't deflate or weep after a few hours. The cocoa flavor comes through without being bitter, making these substantial enough for dessert but light enough to eat multiple ones.

I'm making patte choux! Omg though. Those are some really orange yolks. Like seriously. You can see the difference. As another rnote this orange dough I added a little saffron too for the color. But I probably didn't need it.

It's also the dough I only used heavy cream for too. I want these really brown.

Two batches! This last one with these orange yolks to go! This batter isn't as stiff so... I'm not expecting it to puff up much.

But hey. I can eat them all then.
