Choux Au Craquelin (脆皮泡芙) 🥧
I'm making patte choux! Omg though. Those are some really orange yolks. Like seriously. You can see the difference. As another rnote this orange dough I added a little saffron too for the color. But I probably didn't need it.
It's also the dough I only used heavy cream for too. I want these really brown.
Two batches! This last one with these orange yolks to go! This batter isn't as stiff so... I'm not expecting it to puff up much.
But hey. I can eat them all then.

Choux Puffs from Cafe Afterglow
I was craving an eclair or some sort of choux pastry for aaaages, and I wasn’t having much luck finding them in supermarkets local to me. Then on my birthday on Friday by some sort of telepathy (or maybe she just messaged @loraproudy) I had a @deliveroo turn up from the one and only @taradvisor from @oreeboulangeries. Jesus CHRIST they were amazing. The chocolate eclair is choux pastry, dark chocolate cremeux, and dark chocolate glaze. Tara also got me a Paris Brest (not a euphemism), choux pastry with a crunchy feuilletine base, topped with a light praline mousseline. Sure, it’s spenny, but you pay the bucks and you get the quality. Honestly, I was in love. So I just went on to deliveroo to see the ingredients and names, and now I’m putting through an order of £30.
