With chunks of tender chicken and brightly colored bell peppers, these Chili-Lime Chicken Kabobs are full of flavor. The lime adds a zesty kick, and the chili powder adds heat. Great for a summer barbecue or a quick dinner during the week!
Ingredients: 4 boneless, skinless chicken breasts, cut into 1-inch cubes. 2 tablespoons olive oil. 2 tablespoons fresh lime juice. 2 teaspoons chili powder. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon garlic powder. Salt and pepper to taste. 1 red bell pepper, cut into 1-inch pieces. 1 yellow bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, mix together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper to make the marinade. Place the chicken cubes in a resealable plastic bag or a bowl and pour the marinade over them. Seal the bag or cover the bowl, and refrigerate for at least 30 minutes to marinate. Preheat your grill to medium-high heat. Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion alternately onto the soaked wooden skewers. Oil the grill grates lightly to prevent sticking. Place the kabobs on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred. Serve the chili-lime chicken kabobs hot, garnished with fresh lime wedges, and your choice of sides.
