Fresh rhubarb, pineapple, and chia seeds are used to make this sweet and sour jam. You can put this vegan jam on toast or mix it into your favorite vegan yogurt.
Ingredients: 2 cups chopped rhubarb. 2 cups chopped pineapple. 1/4 cup maple syrup. 2 tablespoons chia seeds.
Instructions: In a medium saucepan, combine rhubarb, pineapple, and maple syrup over medium heat. Bring to a simmer and cook for about 15-20 minutes, or until rhubarb is soft. Remove from heat and stir in chia seeds. Let the mixture sit for about 10 minutes to thicken. Transfer jam to a jar and let it cool before refrigerating.
