Steam Roasted #Oxtail with Roasted local squash, baby #bokchoy, #chanterelles, and natural beef bone #sugo. I have this copper #DutchOven that is so dope for steam roasting gelatinous fatty cuts of meat. I start the oven hot at around 450 to get the tails melting, sizzling and steaming in the tightly covered pot. From there I go down to 300 and check every hour then half till its pliable, coming off the bone and super sticky then I drain all fat, put the whole pot up on a med heat burner and reconstitute and reduce the tails in wine and stock then steam in wild mushrooms and sage till nice and thick You can do this method for any piece of stew meat, and the more fat and gristle, the more it naturally steams, adding a sweet natural succulence to the deep beef flavor. #PotRoast #Method #Perfection #Easy #foodchoreographer #ChezFrank (at East Village, Manhattan)

We had 2002, 2006, 2008 but also #Rinaldi 1997, #Gaja #CostaRussi 1995, #SoriTildin 1996 just for comparison.
