First mushroom hunt of the season. Found some of that lovely yellow. And so many other mushrooms all over the place! Might go on another mushroom hunt tomorrow, if the weather stays nice.

Risotto witch chanterelles (popular in Poland!). While toasting rice I added some powdered milk to up that buttery taste without using too much fat, and I added a big spoon on powdered mushrooms for extra umami. Instead of permigiano-reggiano I used a Polish hard cheese i found at a farmers market. Didn't want to use any wine, so i added an artificial sweetener and some lemon juice at the end.
I found raddish the size of golf balls at the market today, so i cut those up with a cucumber and a salad mix. Dressing is skyr with a bit of honey and salt. I always loved milk with honey and wanted to check out how a milky-honey dressing would go on a salad, and it was absolutely amazing!
For protein i had tempura chicken nuggets. Because fuck you, i love chicken nuggets.
To forage chanterelles safely and successfully, look for golden-yellow, vase shaped mushrooms with false gills growing directly from the soil near trees, keying in on features like their sweet apricot aroma, white string cheese like interior, and damp mossy habitats.
Beware of toxic Jack-o'-Lanterns (Omphalotus), which feature true gills and grow in large glowing clusters directly on wood, or False Chanterelles (Hygrophoropsis aurantiaca), which have brighter, softer true gills.
