Berry rice krispie bars 🍯🥜 A spot of Sunday (non) baking this morning with some healthier snack alternatives to the original Rice Krispie bars 💫 Made with seeds and nuts for energy, and honey to sweeten! A perfect little snack or after meal treat for the kids 😀 ~ 120g Rice Krispies 40g desiccated coconut 2 tbsp sunflower seeds 1 tbsp chia seeds 1 tbsp sesame seeds 80g mixed dried cranberries/blueberries 175g honey 140g peanut butter ~ 1. Line a medium sized tin with baking paper, allowing paper to overhang the sides to form handles. Combine the rice krispies, coconut, chia, sunflower seeds and dried berries in a large mixing bowl. Set aside. 2. Place the honey and peanut butter in a medium saucepan over a medium heat. Cook stirring, until melted, well combined and just coming to the boil. 3. Add the rice krispie mixture and stir to combine. Working quickly, spoon into the prepared tin, pressing down firmly with the back of a spoon. 4. Refrigerate for 1-2 hours or until firm.
