I am currently having Brie problems, every two weeks or so I make the exact same recipe and before Christmas every batch turned out perfect. Since Christmas I have had too hard Brie, Brie that grew no mold at all, and now this....
I've had bries on the softer side before but I think this is my first case of actual slip skin, I opened the fridge this morning and it was just sitting there in a puddle of liquid cheese. I don't know what I'm doing wrong because I'm getting very different results with the exact same ingredients and process.
On the plus side the cheese still tastes fine

how do you cut cheese out of your diet? i’m so French i love cheese so much, i had a panic attack earlier when i couldn’t find my camembert in the fridge. but then again the dairy industry is evil, but also look at this one inch layer of extra cheese on my kraft mac and cheese, it’s beautiful, it’s melting in the flames of the evil dairy industry

I'm avoiding all my issues by focusing instead on a different problem - I have eaten almost an entire bag of cheese cubes but there's one left. Eating this one cube of cheese does not seem possible or my insides might explode out my butt or something, but leaving one cheese cube in my parents' fridge seems a little ridiculous.
Asiago puts the hard in hard cheese. Someone could break a tooth off that thing.Â
