One thing I really like about Brennan taking the time to briefly describe Thimble's impression of Callowyn Royce is that doing that, in addition to making the stakes of battling Sir Seremai more personal for Thimble, retroactively adds weight to Aranessa's line from the cold open two episodes prior: "They killed our whole family, and now we smell like potatoes."
Because while we the audience already had a clear idea of what Julien, the person she says that line to, lost because we met Raimond Davinos before his death and briefly got to know him as a firm, honorable man at odds with his son because of that sense of honour, we'd never seen or even heard mention of any other members of Aranessa's family beyond a brief reference to her unnamed grandfather. Naming Callowyn and giving him a brief description as a jovial, kind, and good man paints a clearer picture of what exactly Aranessa lost that night. Her family is somewhat of an abstract concept but her kind, jovial, younger brother Callowyn is a person, and he's now dead because of what House Tachonis did.
