It seems only right that I should start with my pancakes. I call them "my pancakes" because they are the pancakes I have been making since I was in high school. If you don’t know me, that means they’re the pancakes I’ve been making for more than 30 years. THEY ARE SO GOOD! I've never found a better or more reliably-delicious recipe. If you have, by-all-means share it with me.
You may replace the buttermilk with 1 tablespoon of citrus juice squeezed in the milk of your choice: cow milk, oat milk, soy milk, etc. I use lemon juice. I sprinkle frozen, wild Maine blueberries onto each pancake as soon as I I ladle the batter onto the hot pan.
This recipe makes enough pancakes for three people. The numbers hand-written in blue to the left (up above) are what I use to make pancakes for four.
