Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup brown sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup butterscotch chips. 1/4 cup bourbon whiskey. 1/2 cup whole milk.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, and then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the bourbon and milk. Begin and end with the dry ingredients. Fold in the butterscotch chips. Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
