These rich brownies combine the tartness of fresh raspberries with the rich flavors of Guinness. These are the ideal treat for any occasion, and the Guinness gives this traditional dessert a distinct depth of flavor.
Ingredients: 1 cup Guinness stout. 1 cup 2 sticks unsalted butter. 2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 teaspoon vanilla extract. 4 large eggs. 2 cups all-purpose flour. 1/2 teaspoon salt. 1 cup fresh raspberries. 1/2 cup semi-sweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and grease a 9x9-inch baking pan. In a saucepan, combine the Guinness and butter. Heat over medium heat until the butter is melted. Remove from heat. Whisk in the sugar and cocoa powder until well combined. In a separate bowl, beat the eggs and vanilla extract together. Add this mixture to the Guinness mixture and whisk until smooth. In another bowl, sift together the flour and salt. Gradually add this dry mixture to the wet mixture and stir until just combined. Gently fold in the fresh raspberries and semi-sweet chocolate chips. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs clinging to it. Allow the brownies to cool in the pan for about 10 minutes, then remove them from the pan and let them cool completely on a wire rack. Once cooled, cut the brownies into squares and enjoy!
