i found Edith's backstory of spending her childhood on the wharf while her parents worked and basically raised by the members of the local freakshow and how she as a result doesnt see their existence as inappropriate for a local quilting art show. Bob's Burgers manages to humanize a lot of the side characters where they dont feel like just walking punchlines, one of the main things i love about the show.
Sorry I didn't respond to this sooner, but this was a wonderful ask to get! Edith is one of my favorite minor characters on the show, and I loved spending more time with her and getting to learn more about her background! There's also some fun irony with her square from the quilt being excluded for being inappropriate, since in her first appearance in "Art Crawl" she was upset about Gayle's anus paintings being inappropriate.
And I 100% agree with you about what a great job the show does with humanizing the side characters. I think some of my favorite moments are ones (like "Bobby Driver" for Edith) where we see a more sympathtic side of the characters who are usually antagonists to the Belchers: like Bob and Linda realizing how lonely JImmy is in "Prank You for Being A Friend" or Bob acknowledging to Hugo that his job is important in "Are You There Bob, It's Me Birthday?" or Logan letting Louise go as his human shield (and her, in turn, giving him a head start from the snowballs) in "Better Off Sled". I think there's something great about a show including these human momements for these antagonistic characters because it makes it feel so much more real.
And I think it is really remarkable that the characters in "Bob's Burgers" feel so real after so many years given that usually the trend in longrunning animated comedies tends to go in the opposite direction ("Flanderization" as the TV Tropes folks call it.)

Am I the only one who thinks Edith looked a lot like Louise when she was young?
The top picture is the quilt from Bobby Driver. Edith is blonde but she seems to have similar pigtails as Louise. She's also wearing a pink headset (seems to be diadem or headband) and dress.
