I did decide to go with the kind of quick bread approach used here--where it's more like banana bread or zucchini bread incorporating some sourdough discard for flavor only, so you don't waste it. Baking powder and soda are doing the actual leavening work.
Only here, I'm subbing in the boozy berry-oat mash for that starter. I'm also using kefir (or buttermilk) for the extra tartness, and to activate the soda since we don't actually have sourdough to do it.
(You can also make a good basic sourdough-ish bread using kefir, for that matter. The good stuff carries its own yeast. What I have is cultured from the commercial kind that doesn't anyway. But, combine it with the wine yeast in sake lees? You'd be in business. Going to try that for a plain loaf of bread and maybe pancakes, not this complicated sweet version with berries.)
Anyway, I am obviously also subbing in a gluten free flour blend involving more oat flour because I do like oats, and just using a little xanthan gum for a binder. I prefer psyllium husk for actual yeast-raised bread these days, but xanthan is great for cakes.
This got the about ΒΎ cup frozen blueberries that were left in the open bag, and I made up the rest out of the remaining frozen mixed berries.
Still halfway planning to add a little glaze on top once it's out and cooled down. Probably made with sour cream or more kefir, and a little lemon.
Hoping this turns out reasonable, but we'll have to see. It is smelling good as batter and now in the oven, at least. Actually smelling a little yeasty, baking. That did work out to be a fairly high proportion of boozy berry and oat leavings in the recipe. The texture remains to be seen. Β―\_(γ)_/Β―
