Broccoli Beef is my favorite Chinese takeout entrée. I wanted to incorporate the flavors of broccoli beef and push it into the handheld realm with a blended burger. Oyster mushrooms add umami flavor while absorbing the beef broccoli flavors and keeping the burger juicy. The broccoli slaw has the crisp, greenness of the broccoli while adding an acidic tang. The fluffy bao buns hold it all together for the ultimate Chinese takeout experience in burger form. Chinese Takeout Broccoli Beef Blended Burger Serves 4 2 cups broccoli slaw ¼ cup seasoned rice vinegar 1 tsp sesame oil 4 bao buns, cut in half horizontally like a hamburger bun 8 oz oyster mushrooms, finely chopped 1½ lbs ground sirloin ¼ cup soy sauce 2 tbsp brown sugar 1¼ tsp kosher salt, divided 1 tsp black pepper 1 tsp garlic powder 1 tsp toasted sesame seeds 1. Combine broccoli slaw, seasoned rice vinegar, ¼ tsp kosher salt, and sesame oil. Cover and refrigerate. 2. Heat steamer and steam bao buns for 5 minutes. Keep warm. 3. Heat grill pan to medium high heat. Combine oyster mushrooms, ground sirloin, soy sauce, brown sugar, 1 tsp kosher salt, black pepper, and garlic powder. Divide into 4 equal parts and form patties. Grill 4 minutes on each side for medium rare doneness. 4. Assemble burgers: Open bao buns and place burger on top of bottom of bun. Layer ½ cup of broccoli slaw on top of burger. Place top of bao bun on top of slaw.
