The Best Salad Recipe Ever - Fresh & Flavorful

We have a tradition in our family. I can’t remember when I started it; it was at least 25 years ago. I call it The Corrective Food Experience. It happens when you’ve been away and eaten too much airport and hotel food. Or you went to a restaurant and had a disappointing meal. Or stayed with friends who are terrible cooks...you finally get home and get to have a delicious home cooked meal. My world traveler kids ALWAYS request specific corrective meals when they’ve been abroad for whatever length of time. So the other day, I saw (my favorite) a, classic Cobb Salad on a restaurant menu, craved it all day. Only to be totally bummed when it arrived with no eggs, tasteless cheese, dry chicken, and bottled dressing. Not to be dramatic, but I was despondent. My spirits were salvaged the next day by my own efforts: The Corrective Cobb Salad Experience. I decided to go with crispy prosciutto instead of bacon. The salad is dressed (as per CI) with a vinaigrette, but I served a creamy Roquefort in addition. Ahhhh....
