Honey & Orange Wit - Early Tasting Notes
First early taste of my Honey & Orange Belgian Witbier which accidentally became an Imperial Wit at 8.7%! Who knew that adding 25% honey would drive the attenuation to 1.002!!! Well I do now, lol.
Aroma is sweet and doughy. Taste is that distinct wheat, bready, yeasty, light body. Still a bit green as only a week in the bottle. Carb is tight and lacy but doesn't hold yet. There's a light floral touch, bit of orange peel bitterness. Honey sweetness but a lingering dryness. ABV is totally masked and that's why this shall be called Bayla's Ruin. Bayla is the Norse Goddess of Bees...
Since writing this description I’ve had another bottle from glass. (I always keep at least one plastic bottle as a tester for carbonation). The glass one gave a massive almighty exploding pop when I opened it but didn’t gush. The head was pretty massive when poured and took a while to settle, it did mean that all the yeast was mixed up into it to give that proper wheat beer appearance and taste without having to swirl the bottle which is good I suppose.
I was a little worried about bottle bombs but it should be fully attenuated now as these glass bottles spent nearly an extra week warm conditioning before I moved them out to the shed. Fingers crossed anyway, eek! I’ll just have to be careful when I open them. Anyway the one from the glass was much less green, sure I’ll crack another soon and be able to update on the progress, lol.
