Ingredients: 1 lb fresh salmon fillet, skinless and boneless. 1/4 cup breadcrumbs. 1/4 cup red onion, finely chopped. 2 cloves garlic, minced. 1/4 cup fresh parsley, chopped. 1 egg, beaten. 1 tablespoon Dijon mustard. 1 teaspoon lemon zest. Salt and pepper to taste. 4 hamburger buns. Lettuce leaves. Sliced tomatoes. Sliced red onion. Mayonnaise or tartar sauce for topping.
Instructions: Cut the salmon fillet into small cubes. Place the salmon cubes in a food processor and pulse until coarsely chopped. In a mixing bowl, combine the chopped salmon, breadcrumbs, red onion, garlic, parsley, beaten egg, Dijon mustard, lemon zest, salt, and pepper. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat a grill or grill pan to medium-high heat and oil the grates to prevent sticking.
