Garlic scapes are the flower stalks that emerge from a bulb of garlic. They grow and curl into these fun spiral shapes! Farmers snip off the stalks before the flower heads mature in order to direct more energy to the developing garlic bulb. These stalks from @barkingmoonfarm were a treat to find at the Growers Market yesterday! They are very aromatic and have a pungent garlicky flavor that is somewhat milder than regular bulb garlic. I puréed some of these in a food processor with Parmesan cheese and olive oil to make this garlic scape pesto. It's delicious! You can use it just as you would basil pesto but be prepared, its garlicky! I can think of endless ways to use this. I'm planning on stirring some into my mashed potatoes at dinner time.
