Instructions: For the marinade, put olive oil, minced garlic, sage, salt, and black pepper in a bowl and mix them together. Pour the marinade over the chicken leg quarters that are in a large plastic bag that can be closed again and again. Close the bag and rub the chicken with the marinade. Put it in the fridge for at least two hours or overnight. Warm up the grill over medium-high heat. Take the chicken out of the marinade and put it on the grill. Cook for 30 to 40 minutes, turning it over every so often, until the internal temperature reaches 165F 74C. Place the lemon halves on the grill with the cut side down until they get grill marks. For a sweet glaze, brush honey on the chicken in the last 10 minutes of cooking on the grill. BBQ chicken with a sage flavor should be served with grilled lemon halves on the side.

Instructions: In a bowl, combine brown sugar, kosher salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, cumin, and dried oregano to create the brisket rub. Trim excess fat from the brisket, leaving a thin layer for flavor. Generously rub the spice mixture over the entire surface of the brisket, ensuring an even coating. Cover the brisket with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to penetrate the meat. Preheat your smoker to 225F 107C. Ingredients: 2 racks of baby back ribs. 1/4 cup brown sugar. 2 tablespoons paprika. 2 tablespoons black pepper. 1 tablespoon salt. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 1 cup BBQ sauce. 1/2 cup apple cider vinegar.
Instructions: Take off the membrane on the back of the ribs so that the flavor can get in better. Gather brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper in a bowl. This is the dry rub. Make sure the coating is even by rubbing the mixture all over both sides of the ribs. Use your favorite hardwood chips to heat your smoker up to 225F 107C for extra flavor. Place the ribs directly on the grates of the smoker and smoke them for three hours, making sure the temperature stays the same.
