Ingredients: 4 lbs beef plate ribs. 1/4 cup brown sugar. 2 tbsp paprika. 1 tbsp black pepper. 1 tbsp salt. 1 tbsp garlic powder. 1 tbsp onion powder. 1 tsp cayenne pepper. 1 cup BBQ sauce. Wood chips for smoking.
Instructions: Combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper to create a dry rub. Rub the dry rub generously over the beef plate ribs, covering all sides. Let it marinate for at least 1 hour, or overnight for better flavor. Prepare your smoker with wood chips. Preheat to 225F 107C. Place the marinated beef plate ribs in the smoker and smoke for 3-4 hours or until the internal temperature reaches 190F 88C. In the last hour of smoking, brush the ribs with BBQ sauce, allowing it to caramelize and form a delicious glaze. Once the ribs are tender and have a beautiful glaze, remove them from the smoker. Instructions: Take off the membrane on the back of the ribs so that the flavor can get in better. Every 20 minutes during the last hour of smoking, baste the ribs with the sauce to make sure they get a glossy glaze. There is no need to wait for the ribs to reach 190F 88C before cooking them. Take ten minutes to rest them before cutting them. Make sure to serve your smoked ribs with extra BBQ sauce on the side.
