Ingredients: 1/2 cup popcorn kernels. 4 slices bacon, cooked and crumbled. 1/2 cup unsalted butter. 1 cup granulated sugar. 1/4 cup light corn syrup. 1/4 teaspoon salt. 1/4 teaspoon baking soda. 1/2 teaspoon vanilla extract.
Instructions: After using your favorite method to pop the popcorn kernels, transfer them to a large bowl. Melt the butter in a saucepan over a medium heat. Add the salt, sugar, and corn syrup and stir. Stir the mixture constantly as you bring it to a boil. After the mixture comes to a boil, cook it for four to five minutes, or until it takes on the color of golden caramel, without stirring. After taking the saucepan off of the burner, quickly mix in the vanilla extract and baking soda. Watch out because the mixture will start to bubble. After adding the caramel to the popcorn, gently stir to ensure that it is evenly coated. After the popcorn has caramelized, sprinkle the crumbled bacon on top and stir thoroughly. To cool and let the caramel set, spread the popcorn mixture onto a baking sheet that has been lined. After the popcorn cools, break it into clusters and savor!
