Jeweled Rice is a fragrant and flavorful dish, adorned with colorful dried fruits and nuts. This recipe combines aromatic spices with the sweetness of dried fruits, creating a delightful balance of flavors and textures.
Ingredients: 2 cups basmati rice. 3 1/2 cups water. 1/4 cup butter. 1/2 cup slivered almonds. 1/2 cup chopped pistachios. 1/2 cup golden raisins. 1/4 cup dried cranberries. 1/4 cup dried apricots, chopped. 1/4 cup chopped dates. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cardamom. 1/4 teaspoon saffron threads, soaked in 2 tablespoons warm water. Salt to taste. 2 tablespoons chopped fresh parsley, for garnish.
Instructions: Rinse the rice under cold water until the water runs clear. Drain well. In a large saucepan, melt the butter over medium heat. Add the almonds and pistachios, and cook until lightly toasted, about 2-3 minutes. Add the rice to the saucepan and stir to coat with the butter and nuts. Cook for 1-2 minutes. Stir in the raisins, cranberries, apricots, dates, cinnamon, cardamom, saffron with soaking water, and salt. Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 15-20 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork. Transfer the rice to a serving dish, garnish with chopped parsley, and serve hot.

Ingredients: 1 lb dried pinto beans. 6 cups water. 1 large onion, diced. 2 cloves garlic, minced. 1 jalapeo, diced optional for heat. 1/2 lb bacon, chopped. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste.
Instructions: Remove any debris by rinsing the pinto beans under cold water. Add water and beans to a large pot. After bringing to a boil, lower heat, and simmer for one hour. Crisp up the bacon in a skillet. Remove most of the grease from the skillet, leaving about 1 tablespoon behind. To the skillet, add the diced onion, garlic, and jalapeo. Saut onions until they become transparent. Pour the bacon mixture into the simmering beans in the pot. Add the chili powder, cumin, salt, and pepper and stir. Simmer the beans for a further 30 to 45 minutes, or until they become tender. Taste and adjust seasoning, then serve hot. Savor your mouthwatering Pinto Beans from Threadgill's!
