This German Apple Custard Pancake is a delightful twist on the classic pancake. The tender caramelized apples and custard-like pancake batter come together to create a comforting and satisfying breakfast or brunch treat.
Ingredients: 2 apples, peeled, cored, and thinly sliced. 2 tablespoons butter. 1/4 cup granulated sugar. 1 teaspoon ground cinnamon. 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/2 teaspoon salt. 3 large eggs. 1 1/2 cups whole milk. 1 teaspoon vanilla extract. Powdered sugar, for dusting optional. Whipped cream, for serving optional.
Instructions: Put the butter in a big pan and melt it over medium-low heat. Put the ground cinnamon, 1/4 cup of granulated sugar, and the sliced apples in the pan. It will take about 10 to 12 minutes of cooking, stirring every now and then, until the apples are soft and caramelized. Take it off the heat and set it aside. Whisk the flour, salt, and 2 tablespoons of granulated sugar together in a bowl. Put the eggs in a different bowl and beat them. Then add the whole milk and vanilla extract. Combine well. Pour the wet ingredients into the dry ones slowly while stirring them together until you have a smooth batter. Turn on your oven and heat it up to 425F 220C. Put the apples that have been caramelized in the bottom of a 9-inch 23 cm baking dish or skillet that can go in the oven. The pancake batter should be poured over the apples in the pan. The pancake should be baked in a hot oven for twenty to twenty-five minutes, or until it is puffed up and golden brown on top. Take it out of the oven and let it cool down a bit.
