Apple Snacks (V, GF)
When it comes to snacking, we’re not ones to ignore a classic. From crunchy Granny Smith, to sweet Honeycrisp and juicy Red Delicious, the apple is a favourite amongst teachers, doctors, and mythological scholars. It’s also a good source of fibre and vitamin C. From a time before we could properly peer over the kitchen countertops, the apple has long been our standby afternoon treat.
We’ve since graduated the sweet fruit from after-school snack to a distinctly après or mid-work nibble. We suggest crafting these very grown up bites by cutting apples into thin slices, topping with your favourite sauce or nut butter, and garnishing with flavours of choice. There’s no way to do this wrong—and no mom to stop you from loading your slices with as much almond butter, dark chocolate, and cinnamon as your heart desires. How do you like them apples?
From top, left to right, we’ve crafted our Apple Snacks as follows:
Apple, almond butter, Portage Mix (or any mixed nut medley)
Apple, honey, cinnamon
Apple, peanut butter, coconut
Apple, peanut butter, raspberries
Apple, pumpkin seed butter, pecans
Apple, almond butter, chia seeds

I just made a snack:~
Tiny Fried Apple Tarts!
I started by cutting a few slices off an apple and chunking them into sort of square shapes about 1/2 inch (12-13 mm) on a side.
For the dough, alas, I did not measure!
I took some flour (a couple of tablespoons), sweetener (a tablespoon), powdered milk (at a guess, 3/4 tablespoon) and stirred it all together. NO BAKING POWDER!
I added water a little at a time, working it in, to get a somewhat stiff dough that just took up the flour mix in the bowl.
I turned it out on a floured board and rolled it out quite thin. I cut it out to smallish rounds using a small tomato sauce can for a cutter.
I put an apple chunk and a little sweetened cinnamon in each one, folded them over and sealed the edges with a fork.
Cooking:
Heated a little oil in a small fry-pan until a dough scrap browned to a nice gold in about a half minute. Put the mini tarts in and barely browned the first side and flipped them. Browned the second side nicely and flipped them a second time to finish the first side.
Removed them to a paper towel to drain and cool.
Eating:
If you need directions for this, you are not worthy!
