What a amazing day to remember for life #hungryforhaldiram . We have all heard of Dum Biryani or mutton , but what is this Dum.? Dont worry here is your answer.. Dum pukht can be translated as ‘dum’ meaning ‘breathe in’ and ‘pukht’ meaning ‘to cook’. It basically refers to letting the dish breathe in its own aroma or juice to make it more flavourful. Therefore large handis are sealed with dough or cloth to trap the steam, which then cooks the meat or rice until tender.  The technique may be based on earlier Persian cooking methods introduced in the subcontinent but traditions assigns its origin in pre partition India to the reign of Nawab Asaf-ud-Daulah (1748-97) So being in Hyderabad and if my page doesnt have a single Dum based Post then its a big criminal offence for me 😜😉 So #whatsonmyplate is #dumchicken a preparation that has harmony of flavours , seculent and yet very very simple to cook, mix everything, seal and leave it on slow flame 🤘. When we think of modern desserts and their flavours 1st thing comes into our mind is chocolate (let me know if you agree or defer ) and 2nd most loved flavour is Vanilla. These two flavours are like Jai-Veeru of Sholay best enjoyed when combined. One of my favorite is warm Choco brownie with cold Vanila ice cream topped with nuts and chocolate sauce. Dahi or Yogurt One of the most versatile Ingredient that is present in almost every Kitchen and house. Need not to say about its health benefits, it contains probiotics which keeps the intestine healthy and it also helps in absorption of other minerals in body easier. Most yogurts contains varing amount of Vitamin B6 and B12 , potassium and magnesium. I have been growing up eating lot of yogurt based food from my childhood, starting from Dahi pakhala , Chalha(butter milk), Dahi Bara , Lassi and many many more but my favorite combination with yogurt is Bringal or aubergine in form of Dahi Bingana .
