Hello! :o) I'm glad you asked! For long hair I usually take one single vert and add the "Skin" and "Subdivision" modifier. You'll need the "Extra Mesh Objects" add-on for a single vert. Otherwise you can just make a Plane, select all in edit mode and then M to merge at center, for a home grown vert.

If you select the vert in Edit mode and E to Extrude it, you can make some nice hair shapes. Make sure you have Vert selection (top left).

You can also use ctrl+A to thin or thicken the points. Once you're done, apply the modifiers to be able to draw on textures or vertex paint. :o)

I also go back and remove a lot of the edges to get it more low-poly. I prefer the look of somewhere between subdivided and the square look.

You can also skip out on the subdivision entirely if you want it extra blocky.
