200g cauliflower

1 big tomato

1 spring onion

5g butter

30g gouda, grated

1 table spoon heavy cream

1 teaspoon smoked paprika

½ teaspoon granulated garlic

The best cheesecake I ever made when I was in school for baking and pastry arts was made with Marscapone. Not cream cheese.

So I used mascarpone in the keto recipe instead of cream cheese and it makes the world of difference!!!! Using mascarpone and then adding that layer of ganache on top- WOW!! Holy smokes!!!

However we have tried the Lemon Cheesecake flavour and Cookies & Cream flavour pictured above. They smell like the most delicious candles ever- hahaha. You know those ones that make you super hungry for something delicious cause they smell so sweet and wonderful? That’s how strong the scent is. Now when I describe the texture, it will not sound pleasant- but it surprisingly is. The texture, is also much like the wax of a candle when eaten fresh out of the fridge. It’s smooth and hard and waxy- cause of all the healthy fats. But it’s really nice! And if you let it get to room temperature it’s a little more crumbly and coconutty textured- but I prefer the wax texture fresh from the fridge.

ONLY Sweetened with stevia! No maltitol, no sucralose, no isomalt or any of those other artificial sugars or harmful sugar alcohols that have a high glycemic index.

Alzheimer’s Disease  is now being called “TYPE 3 DIABETES” by many doctors and scientists.  Over-consumption of refined carbs is the major cause of Type 2 Diabetes (formerly called Adult-onset Diabetes). It is no longer called that because our children are developing this disease at an alarming rate now.
