Cuoci il polpo in acqua bollente. Scola il polpo e lascia da parte l'acqua di cottura filtrandola.

Taglia la cipolla rossa a fette piuttosto spesse e falla imbiondire in una padella a bordi alti con una generosa dose di olio evo. Aggiungi il riso e fallo tostare insieme all'olio e alla cipolla, aggiungi sale e pepe.

Adesso aggiungi l'acqua del polpo un po' per volta; devi far ritirare prima di aggiungerne ancora. Mescola e porta a cottura. Spegni il fuoco e aggiungi una noce di burro per mantecare.

Nel frattempo, se ti sei lasciata degli scarti della cottura precedente del polpo, passali in una padella antiaderente con un filo di olio e sale fino a che non sono arrostiti.
