Actually, (this is a tangent) I don't think Belos created the magic groups. He definitely structured them, made them rigid and mandatory, sure. But based on the little kid creating an abomination back in the "Wild Ages" (see Elsewhere and Elsewhen) the covens as schools/groups of magic did exist before him.
Plus, based on the ancient Looking Glass Graveyard devoted to illusionists, there were people that chose to focus on a specific group of magic.
My guess as to how they came about is that certain powerful witches would develop spells of their own, and then teach those spells to apprentices. Over the years as the spells are passed down, people invent new, similar spells, and the magic group grows.
Have you noticed that the covens don't seem based on any inherent magical property? There are plenty of spells like levitation or elemental spells that don't fit any of the covens.
Instead, the covens are based on functionality!
Abominations to fight or do manual labor for you, construction to build houses or repair objects, beastkeeping to care for livestock, etc. You could imagine guilds or schools of magic forming to teach people trades, and the spells useful for those trades!
The most important part though, is that before Belos, it would've all been optional. You could learn any spells you wanted to! Be a jack of all trades, or just focus on one thing! Heck, you could make a whole new magic type of your own!
Anyways to answer your question illusions all the way. Visual tricks, power boosting, memory magic, awesome titles, there is nothing she can't do. Fuck the coven system I'd be a wild witch and still an illusionist. Thought being able to manipulate just one of your senses was scary? Wait till I start getting creative with other spells >:3
