Louisiana Crab Puffs
I was inspired to recreate these delicious crab puffs after my recent trip to the USA, where we were served a plateful as an appetiser a lovely Creole restaurant. The combination of the flaky pastry with the creamy, spicy baked crabmeat is something else - you absolutely have to try this at home. They disappeared too quickly for me to take a photograph, hence the sketch.
Preheat your oven to 200 degrees C. To make the Creole inspired crabmeat filling, finely dice half an onion and half a clove of garlic, then mix them in a bowl with 1/4tsp paprika, 1/4tsp cayenne, 1tsp dried oregano, 1tsp Louisiana Hot Sauce*, & 75g Philadelphia or other cream cheese. Add a drop of worcester sauce if you have any handy. Beat well, and then gently fold in 100g white crab meat. Add a squeeze of lemon juice & a pinch of sea salt to taste, and more hot sauce if you like it spicy. Take a sheet of ready rolled puff pastry, cut it into 2 inch by 2 inch squares, and pop the squares on a lined baking sheet. Put a heaped teaspoon of your crab mix in the centre of each square, brush the edges lightly with beaten egg, then bake for 20 minutes or until the pastry is golden and crisp. These go beautifully with simply roasted cherry tomatoes on the vine, which you can pop in the oven while the puffs are baking. Lovely with a very cold glass of sauvignon blanc.
*If you don’t have any Louisiana Hot Sauce, substitute it for your favourite chilli sauce. I used DL Jardine’s Texas Champagne, which I was delighted to stock up on as soon as we hit a cookware shop (they don’t sell it in the UK, alas).

Low Calorie Pepperoni Pizza Recipe
If you love pepperoni pizza as much as I do, then you’ll be sure to appreciate this healthy pizza recipe that packs in a lot of good for you ingredients and still maintains the all the fabulous flavor of traditional pepperoni pizza recipes. Each nicely sized slice is just 6 Points +, which is a great bargain compared to alternatives. Let the kids help you make this, and you’ve got a healthy family recipe that everyone will enjoy and will keep you on track with your Weight Watchers Points Plus allowance.
Ingredients
3/4 cup canned butternut squash puree
1 cup prepared pizza sauce
1 cup shredded reduced fat mozzarella cheese
1/2 cup shredded Parmesan cheese
1/2 cup sliced turkey pepperoni
Instructions
Preheat oven to 450°F and set oven rack to lowest setting.
Spray a large baking sheet with non-fat cooking spray.
Roll out dough on a lightly floured surface to the size of the baking sheet. Transfer to the baking sheet. Bake until puffed and lightly crisped on the bottom, 8 to 10 minutes.
Mix butternut squash puree and pizza sauce in a small bowl until combined.
Spread sauce evenly over the baked crust. Top with mozzarella, Parmesan, and pepperoni.
Bake until the crust is crispy on the edges and the cheeses have melted, about 12 minutes.
