Ingredients: 2 chicken breasts, grilled and sliced. 2 cups mixed salad greens. 1 ripe mango, peeled and diced. 1/4 cup sliced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup sliced almonds, toasted. 1 avocado, sliced. 2 tablespoons olive oil. 2 tablespoons lime juice. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Toss the mixed salad greens, diced mango, sliced red onion, chopped cilantro, toasted almonds, and sliced avocado together in a large bowl. Put the olive oil, lime juice, Dijon mustard, salt, and pepper in a small bowl and mix them together with a whisk. Give the salad a gentle toss to coat it with the dressing.
